Vegan Green Minerals Matcha Sugar Cookies

We like to describe our Green Minerals tonic as the Arnold Palmer of greens. It’s tart and sweet, and indescribably delicious. If you struggle to eat and drink your greens, Green Minerals is going to be your new best friend. You get the earthy undertones of the herbs and supergreens without them overpowering the natural sweetness of the fresh squeezed citrus. We recommend drinking half the bottle and using the other half to charge up your cookies!

  • ½ cup vegan butter, cold
  • ⅓ cup sugar
  • 1 ½ tsp matcha powder
  • 1 cup oat flour
  • ½ tsp baking powder
  • ¼ tsp salt
  • ½ bottle of Goldthread Tonics Green Minerals

Instructions

  1. First add the butter, ½ cup of the sugar, and the matcha powder. Then add in the flour, baking powder and salt, and mix.
  2. Then add in Goldthread Tonics Green Minerals, flax egg and vanilla extract and whip together about 10 more seconds to combine.
  3. Next, cover the mixing bowl of dough and add to the fridge to chill for 30 minutes to 1 hour.
  4. Use a cookie scoop to form your cookie dough and add to the baking sheet.
  5. Bake for 11-13 minutes until bottoms are lightly browned and the cookie is cooked.
  6. Then, let the cookies cool on the baking sheet for 5 minutes. Once the cookies have cooled, serve and enjoy!
