INGREDIENTS:For Mint Simple Syrup:
- 1/4 cup water
- 1/4 cup granulated sugar
- 4-5 mint leaves
For Minty Mineral No-Jito:
- 2 oz. Green Minerals Tonic
- 1 oz. mint simple syrup (see above for recipe)
- Juice from 1 lime (about 1 oz.)
- Sparkling water, to top
- Mint leaves, for garnish
- Lime, for garnish
To Make the Mint Simple Syrup:
Stir water and sugar together over medium heat until sugar is dissolved. Remove from heat and add mint leaves. Cover and steep for 5-10 minutes, then transfer to a sealable container and let cool completely.
To Make the Cocktail:
Fill a glass with ice. Pour Green Minerals tonic, mint simple syrup, and lime juice over ice. Top with sparkling water. Garnish with mint leaves and lime slices to serve.
